What do I eat?

I get this question a lot. I guess it comes with being vegan(ish). Most people can't fathom a meal without meat or animal protein (dairy, eggs, etc). I've finally come to the conclusion that meals containing the aforementioned are generally a cop-out for REAL FLAVOR. I mean...why bother using spices in a meal when you can toss some cheese on it, and everyone will still "ooh" and "ahh"? But take out that cheese and meat...and suddenly, you've got to make the meal pop without all of that salty goodness!

Enter the spices...ethnic foods...and total healthy goodness!

I've had a few friends ask me to post some of my favorite recipes, since their kitchen repertoire is generally lacking in meatless and cheeseless meals. Since most recipes aren't my own (although I do alter and often simplify them!), perhaps I'll simply post some photos and links to the original recipes!? We'll see if I can keep it up...

I love trying new recipes (IF they're good...otherwise it seems like a total waste of effort!), and these burritos I cooked up earlier this week were a total hit with everyone (vegan and non-vegan alike)! So...if you feel like something new and delicious (and can I say again...SUPER healthy?!!), try this one out!!

Hey Alisa--I don't think we've ever actually formally met each other, but I'm Jared's cousin. I love following you guys on your crazy adventures and such. You remind me a of my husband and I actually--up for an adventure and you love good food!

I actually remember at some point either you or Jared made a comment somewhere on the internet about the book The China Study and what it was about. At the time I thought it was a bit crazy, but it stuck with me. I still have yet to read it, but a few months ago when I started drowning myself in information on organics, GMOs, raw foods, etc. it's the first thing I thought of. So thank you for posting that--the thought that I need to get out and read more information about what I'm eating has nagged at the back of my mind ever since.

I kept going back and forth between vegan/vegetarian/etc. and thus far decided upon vegetarian unless it's local and raised/fed correctly. But I'm always up for new recipes, so we'll definitely be trying this one. Thank you!

I like the sounds of that one! And it looks like something easy enough for me to cook. Did you know I make the pineapple enchiladas like once a week? It's what we've been living off of because ever since you left us we can't figure out what we eat anymore!

That looks yummy. I'm going to definitely try them. And I admire your vegan lifestyle - I think it does take a lot more effort and well, I've been super curious about "what you eat" so I think you should keep on sharing. :-)

ugh- sorry I can't agree- I hate pinto beans- gross me out! Glad you like that stuff- someone's gotta eat it!
